Our current system of animal agriculture generates as much greenhouse gas as the entire transportation sector, but few people are talking about it. Even if we stopped using fossil fuels today, emissions from our food system would still cause the Earth to exceed targets. Each of us are called to protect Earth and all beings from exploitation. This powerful covenant of interdependence challenges us to reflect deeply on how our everyday actions align with our faith. One critical area that is often overlooked is the connection between our food choices and the climate crisis.

In the presentation, From Fork to Forest: Why We Can't Solve the Climate Crisis Without Changing How We Eat, Anna Larsson and Nicola Philpott offer a compelling and accessible look at how our diets contribute to global warming and environmental degradation. Backed by science and grounded in compassion, their message speaks directly to UU values of justice, sustainability, and reverence for the web of life.

Presenters

Anna Larsson spends her days working on strategy and finance in the corporate world. By night, she is a long-time climate and environmental activist. She lives with her partner and two teenagers in Minneapolis and loves biking and getting out in nature. 

Nicola Philpott runs a plant-based meal program at a shelter for people experiencing homelessness in Minneapolis. She has a doctorate in biochemistry and molecular biology and has written 18 peer-reviewed scientific publications. Nicola enjoys gardening, biking with her teenagers, and walking her dogs. She's enthusiastic about empowering people to take climate action through plant-based eating.
